Hiya, I’m Virginia Nelson, the rainbow haired author, but you can call me Virg. This was a wonderful
year for me (YAY for hitting USA Today’s bestseller list!!!) and I was so glad when Heather said she was doing this. I really wanted the chance to give a little something back. But first… my recipe!

Everyone is going to be making their holiday meals soon. I don’t know about your family, but I know we’ll be making more cookies than the Keebler Elves at Ma’s house and otherwise being too busy to make a good, home cooked meal in the meantime.

Which is why I love souper soup. A mish-mash combo of a couple of other recipes (with a dash of special virg laziness for pizzazz) Souper Soup is something my kids are probably sick of, yet I know it will fill their bellies and they’ll go back for seconds (even if we had it twice this week already)


2 bags frozen diced potatoes
2 large cans chicken stock
1 large carrot (diced into tiny pieces)
1 large onion (diced into tiny pieces)
3 cups of ham (diced into tiny pieces)
1 tsp parsley
1 tsp pepper
1 16oz container sour cream (you can substitute half block cream cheese and 8oz heavy whipping cream, if you’d prefer)

Directions: Mix all ingredients other than the sour cream (or other cream product) into slow cooker. Either cook on high for 2hrs or low for 4hrs until the potatoes are soft. Strain out about 2c of material and mash and then reincorporate with rest of soup in slow cooker. Add sour cream. Stir. Let cook on low for about 20minutes longer…

And it is done! I know, this isn’t a holiday treat and everyone else is likely posting those…
What this meal is, though, is hearty. Prep time is literally something like ten minutes total (including adding the sour cream) and you just let it cook all day. It is filling, warm, soothing, and you don’t have to work your brain to fill bellies. This is why I consider it Souper, lol

As we go into the holiday season, I have been asking myself what I can
do or how I can give to others. It has been a tough year for my family
and a tough year for many families whether it is our soldiers fighting
overseas, their families waiting at home, death in the families,
divorces, economic hard times, cutthroat politicians trading on fear and
hate and last, but most certainly not least tragedies such as those
faced in Paris, Beirut, and many other places.

We are very familiar with the choke of the times. Here, I wanted to give
something back this holiday season. Years ago, one of my local radio
stations used to have write ins for people to nominate families for
Christmas or holiday gift certificates. Nominated families or
individuals included those who really were not going to have much to
celebrate because they couldn’t afford gifts or decorations or a big
Christmas meal.

Beginning today and lasting until December 18, I am hosting a holiday
give away post featuring an item and the author who is giving it away.
To enter, all someone has to do is nominate the person they want to send
the gift to and post a short reason why. If that person wins, then the
gift will be sent to the recipient with a note wishing them a happy
holiday season signed from the author giving it away, me and of course
the person who entered them.

So far, I have several authors and items pledged to this effort. Be sure
to visit daily throughout the holiday season and nominate those you
love and care about and send them a gift – and yes, I will send them
around the world!

She has had a really rough couple of years both health wise (her husband has been in and out of the hospital) and financially (her husband can no longer work).
